Visto's Zesty Sloppy Joe's

Sloppy joe with cheese on a hamburger bun.

Summer is long gone, and with winter coming it is time to start making our favorite comfort foods. One of my favorites comfort foods, is sloppy joe's. I have always made them a little different than everyone, but they are always definitely a hit. So, I thought I would give everyone a chance use my own famous "Zesty Sloppy Joe's" recipe. If you try them out, let me know what you think and I will share more recipes from my days as a professional cook. Feel free to share and comment. Enjoy!

  • 1 lb. ground beef or turkey
  • 4 oz. finely chopped mushrooms
  • 2 tbsp. EVOO or butter
  • 1 tbsp. Montreal Steak seasoning
  • 1 tbsp. original Mrs. Dash seasoning
  • 1 tsp. Lawry's seasoned salt
  • 1/2 cup original Sweet Baby Ray's barbecue sauce
  • 1 cup ketchup
  • 1/3 cup honey or dark brown sugar
  • 2 tbsp. Worcestershire sauce
  • 1 tbsp. yellow mustard
  • 1 tbsp. lemon juice
Bring EVOO, or butter, to medium heat. Add finely-chopped mushrooms, Montreal Steak seasoning, Mrs. Dash seasoning, and Lawry's seasoned salt. Saute over medium heat for about 5 minutes, or until mushrooms are fully cooked. Add ground beef or turkey and cook thoroughly. Drain grease from meat. Returned drained meat to low heat and add in the Sweet Baby Ray's, ketchup, honey, Worcestershire sauce, mustard, and lemon juice. If the mixture is not wet enough, add 1 or 2 more tbsp. of Worcestershire sauce or lemon juice. Simmer on low heat for at least one hour. Serve on a bun with or without cheese.

A Letter for Emily

Beautiful redhead with bright blue eyes.

Baby blue eyes, like the bluest skies.
I love to see them fill up with surprise.
Thank you for the ways that you have made me wise.
'Cause I love you in ways that only I can describe.
You're the only one who can calm my cries.
Every time I hear your voice it makes me smile inside.
I'm sorry when I yell and it makes you cry.
It's too easy to blame it on my stressful life.
It hurts me too, but it will be alright.
I'm always your Daddy at the end of the night.
I love you in ways only a father can write.
Whenever I am wrong, I will make it right.
I've waited all of my life to see a star this bright.
I've never been the same since you came into my life.
I will help you to succeed with all of my might.
It may seem a bit extreme, but you're the reason for my life.
In this life, a darkened tunnel, you are my only hope of light.
When we are together, it just feels so right.
You are my lone beautiful rose in this land of blight.
I love you in ways only a father can give light.

Illusion of Freedom

Along the fairway of the Reed Park disc golf course

When I snap back to reality, the calamity of life hits me.
Society looks down on me, so I sneer back; that’s strategy.
See, politicians, big wig riches are stealing my wealth from under me.
And they steal from you, and they always succeed. And it goes unnoticed, such a tragedy.
And it’s sad to see all the thieves go free. ‘Cause if you ask me, that’s piracy.
These hopes and dreams that the government feeds only mislead my family.
My wife and kids can’t afford to eat in this ass-backwards economy.
So I get proceeds from greens and ink, but Uncle Sam says that’s a felony.
Just shut your mouth and hope you’ll be free to see the day you got grand babies.
The weight of the world is all on me, but I’m like fuck it that’s just gravity.
I still believe we will all be free, but not until we see things differently.
Democracy itself needs a reprieve because the system is flawed dramatically.

Hate Mail

I take care of business neatly. Nobody needs to meet me.
Payment clears on PayPal, and you will get your shit discretely.
We'll be hitting up the street scene with our rides flexing beefy.
So, if you need a tree then my goons will come and see me.
I'm just doing me, steering clear of the precinct.
My picture's perfect clear. I see through your shit distinctly.
Your picture's got a haze, like you ordered something greasy.
The smell of shit is in the air. What the fuck you trying to teach me?
All the preaching isn't fair. Introducing Visto's demons.
Decipher all these meanings. Find an undercover legion.
You call yourself a dad? Well, you're not a father even.
Just a bitch that's a snitch. Make a living off of leaving.
So, get your PPO, my dude. You're gonna need it.
As of right fucking now we are permanently beefing.
When you're no longer around, I guess we can call it even.
You're just another fucking clown that I never could believe in.

The Weight of the World

Two beautiful young girls feeding ducks.

The world is changing. It is not quite what it used to be.
For my grandchildren I am concerned, and for their ancestors I weep.
The pollution is reaped from the seed that we sow.
Sulfur rain ignites death by glucose.
Typhoons, hurricanes, and even volcanoes will be more deadly than ever.
Yet we do nothing about it, and we all know we'd better.
The death created by humans is as plain as the day.
But the Earth still cries out in vain with its pain.
How many creatures that lived once no longer remain?
By the Earth's greatest creation destruction will unfold.
Humans wreak havoc and bring death wherever we go.
Nobody owns the lawn that they mow. We lease from ancestors, and leave it for them broke.
The Human race is the Earth's greatest joke.

The Thin Green Line

Hand holding a stack of money

I don't think they understand how hard it is.
Working 5 hours a week, and feeding two kids.
Wife pays the bills, but she ain't getting rich.
This shit is aggravating. I gotta flip the switch.
Let me get another brick, and then turn it into nicks.
Went to see the Doc, and had him sign my slip.
Now I'm picking out my bag like I'm gonna flip the script.
It's hitting a loophole when I don't wanna hit a lick.
I've hit a few before, and I'm tired of the shit.
Man, this gap is getting thick between the poor and the rich.
There's money to be found, but they aren't sharing it.
So I get on a hustle 'til I feed the wife and kids.
I'm not a gangster. Don't even know what that is.
I'm just a fed up man who ain't got no quit.
The world is a thin green line, and I'm tired of walking it.
